Grilled Corns or Beans




INGREDIENTS
- Good corns or beans: 6, remove their husks and silk
- Vegetable oil: 2 tablespoons
- Fish sauce: 2 tablespoons
- water: 2tablespoons
- Sugar: 1 12  tablespoons
- Salt: 1 teaspoon
- Green onions: 2, slice thinly
- Vegetable oil for brushing
DIRECTIONS
  • We prepare charcoal grill or preheat an ungreased cast-iron skillet over medium heat.
  • Then we  brush  very lightly the corn with oil and set on the grill rack or in the skillet.
  • We cook in heat and  turn over every 2-3 minutes, until the kernels are tender and nicely charred, 12-15 minutes total; keep warm.
  • Meanwhile, in a bowl stir together the fish sauce, water, sugar and salt until it is dissolved.
  • And we heat the 2 tbsp oil in a saucepan over medium heat until very hot but not smoking.
  • Be carefully pour liquid mixture in (it may sputter a bit so watch out); add the green onions and simmer until the sauce begins to thicken, about 30 seconds; remove from heat and cool.
  • We brush cooked corn with the sauce and serve.

Chicken Legs and Wings

Ingredients:

·         2 1/2 lbs chicken legs
·         1 2/3 tablespoons olive oil (to help it stop sticking to the pan)
·         1/2 cup soy sauce
·         1 2/3 tablespoons ketchup
·         3/4 cup honey
·         2 -3 garlic cloves, minced
·         salt and pepper
Methods:
·         Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
·         Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper.
·         Pour over the chicken.
·         Bake in preheated oven for one hour, or until sauce is caramelized.
·         Could also use wings or pork ribs.

Spicy Lime Sauce with Shrimp

Ingredients:

·         1/2 cup lime juice (3 or 4 limes)
·         1/4 cup sugar
·         1 tablespoon salt
·         2 tablespoons canola oil or 2 tablespoons grape seed oil
·         1 teaspoon minced garlic
·         1/2 teaspoon crushed red pepper flakes
·         1 1/2 lbs peeled shrimp or 3 lbs head-on unpeeled shrimp
·         minced cilantro
Methods:
1.      In a small bowl, combine the lime juice, sugar and salt. Place oil in a 10- or 12-inch skillet, and turn the heat to high. A minute later, add the garlic and chili flakes and cook the garlic until it just begins to brown. Immediately add the lime juice mixture all at once, and cook until it reduces by half, or even more, 3 to 5 minutes. There should be only about 1/4 cup of liquid in the skillet, and it should be syrupy.

2.      Add the shrimp, and cook over high heat. The shrimp will give off liquid of their own and begin to turn pink almost immediately. After about 2 minutes, stir contents of pan. Continue cooking, stirring occasionally until all the shrimp are pink, about 4 minutes total. Taste, adjust seasoning, garnish with cilantro and serve with rice.

Beef Lok Lak Recipe

A delicious recipe for chicken, beef or shrimp Lok Lak you can find all over Cambodia. We gained the original recipe from local restaurant.

Ingredients
These ingredients serve 1, so multiply up as you wish
- 150g chicken breast or beef - sliced, or whole shrimps
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon crushed black pepper
- 1/3 teaspoon chili sauce
- 1 teaspoon oil + extra for cooking
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 2 cloves of garlic, crushed
- 1/2 an onion, chopped
- A few lettuce leaves
- Rice
For the pepper sauce:
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon crushed back pepper
- 1/2 teaspoon crushed garlic
- 1/4 of a lime


Preparation
- Mix sugar, salt, pepper, oil, soy sauce, oyster sauce and garlic in a mixing bowl, add meat and coat thoroughly. Marinate 30 to 60 minutes.
- Mix salt, sugar, pepper and garlic in small bowls (pepper sauce for each person)
- Add oil to a wok, sauté onions until brown and add chicken, stir fry about minutes, until done.
- Mix in chili sauce as desired.
- Prepare serving plates with rice and a bed of lettuce
- Just before serving, squeeze the juice of 1/2 lime into the pepper sauce and stir lightly.
- Serve meat or shrimps over lettuce with pepper sauce on side.

Tuek Kroeung Khmer

Ingredients:
– Blackhead fish 500g
– Chili (Optional)
– Prahok (ប្រហុក), grilled (Optional)
– Garlic 3 cloves
– Red Onion 3 nuts
– Ripe tamarinds (Optional)
– Sugar, seasoning to taste

=>Vegetable: Cucumbers, brinjals, egg plants, long beans, ridge guards bitter leaves caft carrot cabbage banana flower and water hyacinth…etc.

Methods:

Grill the fish as well, pick in pieces then keep aside for pounding. Roast chilies, garlic, and red onion as well then get into the mortar and put sugar, seasoning, ripe tamarind pound together after that add the fish pieces and salt fish then pound as well to taste.

We clean vegetables, slice cucumbers and banana flower, brinjals, egg plants, and cut long beans.We cut ridge guards then get to boil, but for bitter leaves only parboil. Then We prepare vegetables in plate then add mixture fish on top, ready for serve.

Beaf Lok Lak with green Spinach

This is a kind of various beef Lok Lak because generally we all know beef Lok Lak with salad but now i want you to try beef Lok Lak with a type of spinach.
Ingredients
– Beef
– Green spinach : a kind of green spinach with big stem and flat leaves
– Garlic, oil, fine pepper, salt, limes, garlic leaves…..

Method


First, we clean beef and green spinach then we slice beef into small pieces as you want. We chop garlic in to small pieces, some of them use to fry with beef and others for sauce. Next, we boil spinach for a while and take out to prepare on a plate and then we fry chopped garlic with beef until fine or raw up to you. Finally, Put fried beef on a plate you prepared and make a sauce by mixing chopped garlic, salt, lime and fine pepper as you preferred. That’s all for your food today, try and enjoy it.
